Jason is such an amazing daddy to Hannah. She is one lucky little girl! He does anything and everything for and with her. I love watching them interact and play. It makes this momma's heart smile every time I see them together!

Hannah and I had some special time together preparing for Jason's birthday in the kitchen. She loves to bake with me and helped me make the cupcakes for Jason.
YUMMY Pina Colada cupcakes!
This is the PERFECT summer cupcake for any occassion! It's hard to stop at just one cupcake! :)
Pina Colada Cupcakes
(adapted from here)
1 box yellow cake mix
1/3 cup vegetable oil
1/4 cup water
1 small can crushed pineapple, undrained
1/2 teaspoon coconut extract
Preheat oven to 375F. Line 24 regular size muffin cups with paper baking liners. Mix everything together in a large bowl, mixer speed on low-medium. Once mixed, spoon batter evenly into all 24 muffin cups. Bake 14-19 minutes until a toothpick inserted in the inner most cupcake comes out clean. Take cupcakes out of muffin tin and let cool completely before frosting.
1 can creamy vanilla frosting (not the whipped kind)
1 teaspoon coconut extract
(We aren't crazy about the rum extract taste so I leave that out of the cake and frosting mixes)
Mix coconut extract directly in the tub of vanilla frosting. Once thoroughly mixed, spread evenly on each cupcake. Sprinkle shredded coconut on each cupcake after frosting. Serve chilled if you can though it isn't necessary. (I think the cupcakes taste much better chilled/refrigerated.) Store in airtight container in refrigerator....icing will melt/slide off if not refrigerated because of coconut extract. ENJOY!
